vineyards, grapes selected and enzymes added on reception, pre-fermentation
maceration for 7 days, alcohol fermentation at 30-32°C, post-fermentation
maceration for 9 days, malolactic fermentation in barrels, then matured
on the oak for eight months.
Colour:
Garnet with purple highlights.
Noze:
Hints of raspberries, leather evolving to oak, roasted aromas with undertones
of liquorice.
Palate:
The well-integrated tannins bring out a interesting fullness with aromas
of dark fruit, vanilla and roasted coffee beans.
Serving-suggestions:
Serve between 10 and 12°C. The perfect match for roast pheasant
or goat's cheese.
