Origin: Vin de pays des Côtes de Thau.
Type: Red.
Grape varieties :Cabernet.
Vinification:Selected vineyards, grapes selected and enzymes added on reception, pre-fermentation maceration for 7 days, alcohol fermentation at 30-32°C, post-fermentation maceration for 9 days, malolactic fermentation in barrels, then matured on the oak for eight months.
Colour: Garnet with purple highlights.
Noze: Hints of raspberries, leather evolving to oak, roasted aromas with undertones of liquorice.
Palate: The well-integrated tannins bring out a interesting fullness with aromas of dark fruit, vanilla and roasted coffee beans.
Serving-suggestions: Serve between 10 and 12°C. The perfect match for roast pheasant or goat's cheese.

Grape variety: 100% Syrah
Vinification: Modern, temperature-controlled maceration on the skins.

Origin: Vin de Pays d'Oc
Grape variety: 100% MERLOT
Vinification: : Selected vineyards, grapes selected and enzymes added on reception, pre-fermentation maceration for 5 days, slow, temperature-controlled fermentation, 18-day post-fermentation maceration.
Colour :Crimson with purple highlights.
Noze: Intense bouquet of red fruit with hints of spice.
Palate:Supple attack; a fruity, harmonious, soft and full wine with a long liquorice finish.
Gastronomy: Serve at 12-14°C. Excellent with casseroles, red meat and cheese.

Preparation: Piquepoul grape juice with the fermentation stopped by adding quality Picpoul de Pinet eau-de-vie, giving a final alcohol content of 17%.
Matured in barrels for nine months.
