OENOLOGY

Appellation : AOC Coteaux du Languedoc Picpoul de Pinet .
Grape variety : 100% Piquepoul.
Harvesting : Mainly handpicked. The Duc de Morny Cuvée is made from a rigorous and exclusive selection of grapes from vineyards of mature vines.
Vinification :Selected vineyards, night harvesting, grapes selected and enzymes added on reception, maceration at 6°C for 8 hours prior to fermentation, low pressure pneumatic pressing, static racking of the must, clear must reintroduced, low temperature alcoholic fermentation, racking and pumping done under inert gas, stabulated racking.

TASTING NOTES
A well-structured wine of considerable character whose soft and full taste acts as a perfect foil for the characteristic acid edge of the Piquepoul grapes.
Colour : Pale gold with green highlights; interesting "legs".
Noze :Intense fruity bouquet, in particular of citrus and exotic fruit.
Palate : Well balanced, the hint of exotic fruit revealing the grape's maturity, long-lasting and intense, with a touch of candied fruit on the finish.

GASTRONOMY
Serve chilled (8°C).
Its full flavour comes out best when served with bouillabaisse, fish soup and fricassee of fish, cuttlefish or other dishes with Mediterranean sauces, seafood and shellfish.
Best drunk within two years of harvesting.
