OENOLOGY
     
Appellation :
AOP Languedoc Picpoul de Pinet
Grape variety :
100% Piquepoul
Type of soil:
Limestone, broken stone, and quartz. Facing South.
Vinification :
Parcel-selectioned, chosen at the platform, enzymes added upon reception, prefermentary maceration at 8°c for 6 hours, static settling of the must, fermentation at low temperature.
Alcool:
12.5%Vol.

TASTING
     
Hue : brilliant yellow with green tints.
Nose : fine and fresh, fruity and floral aroma. Good aromatic persistance with overtones of citrus fruit.
Palette : lively, fresh with lemony and floral touches followed by a light refreshing amertume.
   
GASTRONOMY
   
To be served fresh (6 - 8°C). Expresses its full taste when accompanied by seafood and grilled fish.

100% Piquepoul
Type of soil:
Limestone, broken stone, and quartz. Facing South.
Vinification :
Selected vineyards, night harvesting, grapes selected and enzymes added on reception, maceration at 6°C for 8 hours prior to fermentation, low pressure pneumatic pressing, static racking of the must, clear must reintroduced, low temperature alcoholic fermentation, racking and pumping done under inert gas, stabulated racking.
Alcool:
13%Vol.

TASTING
     
Hue : Pale gold with green highlights; interesting "legs".
Nose : Intense fruity bouquet, in particular of citrus and exotic fruit.
Palette : Well balanced, the hint of exotic fruit revealing the grape's maturity, long-lasting and intense, with a touch of candied fruit on the finish.
   
GASTRONOMY
   
Serve chilled (8°C).
Its full flavour comes out best when served with bouillabaisse, fish soup and fricassee of fish, cuttlefish or other dishes with Mediterranean sauces, seafood and shellfish.
Best drunk within two years of harvesting.

Vinification :
Rigorous selection of vineyards. Modern low temperature vinification off the skins with no juice added.
Alcool:
13%Vol.

TASTING
     
Hue : Luminous, pale yellow with silvery highlights.
Nose : Aroma of lychees and pears, evolving to white flowers.
Palette : Lively and fresh with a hint of lemon verbena and citrus fruit ending in a delicate finish.
   
GASTRONOMY
   
Serve chilled (6-8°C).
Its full flavour comes out best when served with seafood, shellfish, grilled fish, hors d'oeuvres and traditional Mediterranean dishes.

AOP Coteaux du Languedoc
Grape variety :
Piquepoul, Grenache et Roussane
Type of soil:
Limestone, broken stone, and quartz. Facing South.
Vinification :
Selected vineyards, grapes selected and enzymes added on reception, low pressure pressing, static racking of the must, fermentation in French oak barrels (1/3 from the Vosges, 2/3 Allier), stirred and matured on the second lees for at least 8 months.
Alcool:
12.5%Vol.

TASTING
     
Hue : Bright, shiny gold with green highlights, interesting "legs".
Nose : Fruity, candied apricot, honey, vanilla, evolving to a hint of toast.
Palette : Well-balanced and full-bodied with a complex structure; hints of apricots and peaches, evolving to lightly toasted ginger-bread.
   
GASTRONOMY
   
Serve slightly chilled (12°C); delicious on its own as aperitif and between meals.
Its full flavour comes out best when served with cooked seafood or fish.
Goes beautifully with white meat; ideal with desserts.
